This is my mum's recipe and it is addictive, in a good way!
It is a great way to get the whole family to eat their greens.
Serve with a protein and some baked vegetables for a complete meal.

Ingredients

2 Tbs extra virgin olive oil
1 Tbs soy sauce, tamari or Braggs
2 Tbs wine vinegar, balsamic, or lime juice
1/4 tsp nutmeg
1 tsp (or more) of grated ginger
1 clove garlic, crushed
freshly ground black pepper
250gms of young fresh spinach
2 Tbs toasted sesame seeds

Method

In a jar or a blender, mix the olive oil, soy sauce, vinegar, garlic, nutmeg, pepper.
Wash and dry the spinach and tear into smallish pieces. Place in a salad bowl andpour the dressing over the top, then sprinkle on the sesame seeds. Toss lightly.
Serve fairly soon.
