Oatmeal Cookies

This is a current favourite of mine, because while they make a great healthy snack, they also sub for a quick breakfast. No sugar, no oil, no flour. They are open to your interpretation.


Ingredients:

  • 1 banana, mashed.

  • 1 cup rolled oats

  • 1/4 cup raisins, sultanas or chopped dates

  • 1 tsp cinnamon


Optional:

  • 1 carrot, grated

  • 1/3 cup nuts or seeds

  • 1/3 cup other dried fruits

  • 2 tbs nut butter of your choice

  • other spices- I like ginger

Directions

  • Mix together all the ingredients. If it seems too dry, add another banana!

  • I mix in my Thermomix but its also easy by hand.

  • Then take walnut size pieces and flatten on a tray to make about 8-10 biscuits. They won’t spread so you can put them quite close together on the tray.

  • Bake for 20-30 minutes in a 180C oven. Check after 20 minutes, but my oven takes 30 minutes.
